Is there anyone out there like me that is completely obsessed with Chipotle’s rice? I *love* that rice. Once I actually got just a bowl of rice when I went there for dinner. I could eat that stuff all day and never get sick of it! I used to work downtown in DC right next to a Chipotle and was able to have that rice any old time I pleased. I now work out in the suburbs at least a 20 minutes drive from my cilantro lime goodness. So I decided to try replicate that delicious flavor at home.
This recipe took me a couple of tries to get just right but I think I totally nailed it with this last one. Now that I have this all figured out I’ll have to make things that call for rice more often because I can’t think of any meal that this wouldn’t be a fantastic side dish for!! 🙂 You can increase the amount of lime or salt in the recipe according to your tastes. I personally like mine salty so I added a 1/2 t. of salt instead of the 1/4 t. below. Decision is yours… either way it’s delicious!
Also if you’re a fan of Chipotle knock-offs try this roasted corn salsa. Pair it with the rice, some meat and a tortilla and you’ll have your very own burrito! 🙂 Roasted Corn Salsa
Chipotle Rice Recipe
yields 3 cups of rice
1.5 cup of white rice
1 small lime
1/4 cup chopped fresh cilantro
1/4 t. salt (additional salt to taste)
Directions
1) Prepare rice according to instructions on the package.
2) When the rice is finished add the juice from one lime, salt, and cilantro to the rice. Stir and place back over low heat, uncovered for 1 minute.
Serve warm.
